Instructions
- Prepare the stovetop smoker by placing the wood chips in the bottom box.
- Put the trout on the pan above the wood chips.
- Season the trout with salt and pepper.
- Seal the smoker with its fitted lid.
- Place the smoker on medium heat and wait until you can smell smoke (about 5 minutes).
- Let the trout smoke for about 15 minutes.
- Serve the smoked trout with flatbread and garlic-thyme aioli.
