Smoked Mountain Trout

Ingredients

The trout

  • 1 whole mountain trout
  • to taste salt
  • to taste pepper

For smoking

  • 1 cup Alder wood chips

For serving

  • 1 piece flatbread
  • to taste garlic-thyme aioli

Instructions

  1. Prepare the stovetop smoker by placing the wood chips in the bottom box.
  2. Put the trout on the pan above the wood chips.
  3. Season the trout with salt and pepper.
  4. Seal the smoker with its fitted lid.
  5. Place the smoker on medium heat and wait until you can smell smoke (about 5 minutes).
  6. Let the trout smoke for about 15 minutes.
  7. Serve the smoked trout with flatbread and garlic-thyme aioli.
