Chocolate Cookies and Cream Ice Cream

Ingredients

The base

  • 2 cups heavy cream
  • 2 cups whole milk
  • 6 oz semi-sweet chocolate chips or chopped chocolate
  • 1 Tbsp light corn syrup
  • cup granulated sugar
  • 3 large egg yolks
  • 2 tsp vanilla extract
  • 1 pinch salt
  • 2 Tbsp cocoa powder

The mix-in

  • 1 cup crushed Oreos

Instructions

  1. In a medium saucepan, combine cream, milk, chocolate, and corn syrup over medium heat, stirring until nearly boiling.
  2. In a bowl, mix sugar, egg yolks, vanilla extract, and salt until pale and fluffy.
  3. Blend in cocoa powder to the egg mixture.
  4. Reduce heat and take ½ cup of the hot cream mixture and whisk it into the egg yolk mixture.
  5. Pour the egg yolk mixture back into the saucepan and cook, stirring constantly, until thickened (about 4-5 minutes).
  6. Transfer the mixture to a bowl, cover, and chill until cold.
  7. Freeze the mixture for 30 minutes to 1 hour, stirring once during chilling.
  8. Pour the mixture into an ice cream maker and process according to the manufacturer's directions, adding Oreos in the last 5 minutes.
  9. Store the ice cream in an airtight container in the freezer.
