The mix-in
Instructions
- In a medium saucepan, combine cream, milk, chocolate, and corn syrup over medium heat, stirring until nearly boiling.
- In a bowl, mix sugar, egg yolks, vanilla extract, and salt until pale and fluffy.
- Blend in cocoa powder to the egg mixture.
- Reduce heat and take ½ cup of the hot cream mixture and whisk it into the egg yolk mixture.
- Pour the egg yolk mixture back into the saucepan and cook, stirring constantly, until thickened (about 4-5 minutes).
- Transfer the mixture to a bowl, cover, and chill until cold.
- Freeze the mixture for 30 minutes to 1 hour, stirring once during chilling.
- Pour the mixture into an ice cream maker and process according to the manufacturer's directions, adding Oreos in the last 5 minutes.
- Store the ice cream in an airtight container in the freezer.
