Ingredients

  • ½ cup freeze-dried strawberries
  • ½ cup dry-roasted unsalted almonds
  • 1 cup pitted and chopped dried Medjool dates
  • to taste pinch Diamond Crystal brand kosher salt
  • ¼ cup unsweetened shredded coconut, toasted

Instructions

  1. Pulse the freeze-dried strawberries in a food processor until powdered.
  2. Add the almonds and pulse to chop them roughly.
  3. Transfer the strawberry powder and chopped almonds to a bowl.
  4. In the food processor, chop the dates, then pulverize until they form a sticky ball.
  5. Combine the strawberry powder, chopped almonds, and a pinch of salt with the date paste in the food processor.
  6. Pulse until a dense dough forms; add water if necessary.
  7. Roll tablespoon-sized portions of the dough into balls.
  8. Coat the balls in toasted shredded coconut.
  9. Refrigerate for up to 1 week or freeze for up to 1 month.
