Peanut Butter and Jelly Energy Balls

Instructions
- Pulse the freeze-dried strawberries in a food processor until powdered.
- Add the almonds and pulse to chop them roughly.
- Transfer the strawberry powder and chopped almonds to a bowl.
- In the food processor, chop the dates, then pulverize until they form a sticky ball.
- Combine the strawberry powder, chopped almonds, and a pinch of salt with the date paste in the food processor.
- Pulse until a dense dough forms; add water if necessary.
- Roll tablespoon-sized portions of the dough into balls.
- Coat the balls in toasted shredded coconut.
- Refrigerate for up to 1 week or freeze for up to 1 month.
