Ingredients

The Cookies

  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs, room temperature
  • cups gluten-free flour
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • ¼ teaspoon salt

The Frosting

  • 4 ounces cream cheese, softened
  • 6 tablespoons butter, softened
  • 2 teaspoons vanilla extract
  • 2 cups powdered sugar
  • 1-2 teaspoons water or milk, as needed

Instructions

  1. Beat together the butter, sugars, and vanilla until well combined.
  2. Add in the eggs and mix until fully incorporated.
  3. Mix in the remaining cookie ingredients until a dough forms.
  4. Chill the dough for 30 minutes in the fridge.
  5. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  6. Form the chilled dough into 12 balls and flatten them slightly on the baking sheet.
  7. Bake for 8-9 minutes until soft but set.
  8. Transfer cookies to a cooling rack to cool.
  9. Prepare the frosting by beating together cream cheese, butter, and vanilla, then gradually add powdered sugar.
  10. Spread frosting on cooled cookies.
