Ingredients

The cookie dough

  • cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup unsalted butter
  • ¾ cup granulated sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract

The filling

  • 2 tablespoons butter
  • ¼ cup granulated sugar
  • 1 tablespoon ground cinnamon

The icing

  • 1 cup confectioners’ sugar
  • 3 tablespoons milk
  • ½ teaspoon pure vanilla extract

Instructions

  1. Prepare the dough by whisking together the flour, baking powder, and salt.
  2. In a large bowl, beat the butter and sugar until creamy, then add the egg and vanilla.
  3. Mix in the dry ingredients until combined, adjusting with more flour if necessary.
  4. Divide the dough and roll each portion into a rectangle, then spread melted butter and sprinkle the cinnamon sugar mixture on top.
  5. Roll each rectangle tightly into logs and chill for at least 2 hours.
  6. Preheat the oven and slice the chilled logs into ½ inch thick cookies.
  7. Bake until lightly browned, then cool before icing.
  8. Mix icing ingredients and drizzle over the cooled cookies.
