Instructions
- Microwave the sweet potato until soft, scoop out the flesh, and mix with ricotta, Parmesan, and salt. Gradually add flour and knead gently. Form into ropes, cut into pieces, and boil until they float. For the sauce, blanch broccoli rabe, then pan-fry gnocchi in butter until golden. Add broccoli rabe, garlic, sage, and salt, then add cream and Parmesan. Toss and serve.
