Sweet Potato Gnocchi

Ingredients

  • 1 ½ cups mashed roasted sweet potato
  • 6 oz ricotta cheese
  • ½ cup shredded parmesan cheese
  • 1 tsp salt
  • about 1 ¼ cups all-purpose flour
  • more for rolling and shaping flour
  • a pinch brown sugar

Instructions

  1. Combine the sweet potato and ricotta in a large bowl.
  2. Add parmesan cheese, salt, and brown sugar, and stir until well combined.
  3. Fold in flour, adding 2 tablespoons at a time, until a dough forms.
  4. Turn the dough out onto a floured surface and divide it into 3 pieces.
  5. Roll each piece into a 20-inch rope, adding more flour as needed.
  6. Cut each rope into 1-inch pieces.
  7. Optionally, shape the gnocchi using a fork for better sauce adherence.
  8. Boil the gnocchi in salted water for 3-5 minutes until they float.
  9. Remove with a slotted spoon and let cool on a baking sheet.
  10. Sauté the gnocchi in butter or oil until browned, adding fresh herbs if desired.
