Ingredients

  • 1 pound russet potatoes, peeled and cubed
  • 2 teaspoons salt, divided
  • 3 ½ tablespoons olive oil
  • 1 cup all-purpose flour

Instructions

  1. Boil the potatoes in salted water until tender, about 15 minutes.
  2. Mash the potatoes until smooth.
  3. Mix in salt, olive oil, and flour to form a dough.
  4. Divide the dough into 5 pieces and roll each into ½-inch thick ropes, then cut into gnocchi.
  5. Boil the gnocchi in salted water until they float, then drain.
  6. Serve warm with your favorite sauce.
