Instructions
- Boil the unpeeled potatoes in water until soft.
- Let the potatoes cool slightly, then peel and cube them.
- Pass the cubed potatoes through a potato ricer into a mixing bowl.
- Add the beaten egg to the mashed potatoes and mix well.
- Sift the flour and salt over the potato mixture and combine to form a dough.
- Knead the dough on a floured surface until smooth and not sticky.
- Divide the dough into four pieces and roll each into a rope.
- Cut the ropes into ½-inch pieces and shape the gnocchi.
- Dust with flour and either cook immediately or freeze for later use.
