Ingredients

  • 2 pounds russet potatoes
  • 1 large egg
  • 1 ½ cups all-purpose flour
  • 1 teaspoon salt
  • ½ cup extra flour (for dusting)

Instructions

  1. Boil the unpeeled potatoes in water until soft.
  2. Let the potatoes cool slightly, then peel and cube them.
  3. Pass the cubed potatoes through a potato ricer into a mixing bowl.
  4. Add the beaten egg to the mashed potatoes and mix well.
  5. Sift the flour and salt over the potato mixture and combine to form a dough.
  6. Knead the dough on a floured surface until smooth and not sticky.
  7. Divide the dough into four pieces and roll each into a rope.
  8. Cut the ropes into ½-inch pieces and shape the gnocchi.
  9. Dust with flour and either cook immediately or freeze for later use.
