Instructions
- Preheat the oven to 450°F and pierce the potatoes with a fork, then wrap in foil and bake for 45 minutes to 1 hour until soft.
- Peel the hot potatoes using a towel to protect your hands and cut them into chunks.
- Press the potato chunks through a potato ricer onto a clean surface.
- Pour the beaten egg over the potatoes, sprinkle with salt, and sift the flour over the top.
- Gently mix the ingredients together without overworking the dough, adding more flour if necessary.
- Form the dough into a log and cut it into 8 pieces, rolling each into a rope about ½ to ¾ inch thick and cutting into 1-inch pieces.
- Shape each piece by pressing it down and rolling it to create a tube, then place them on a floured surface to rest.
- Bring salted water to a boil and cook the gnocchi in small batches for 2-4 minutes until they float to the top, then remove with a slotted spoon.
