Ingredients

The fruit

  • 7-8 pieces ripe peaches
  • optional pieces cherries

The topping

  • 1 cup gluten-free rolled oats
  • ¼ cup almond meal
  • ¼ cup gluten-free flour
  • ½ cup roughly chopped pecans
  • 2 Tbsp packed light brown sugar
  • 2 Tbsp coconut sugar
  • 1 pinch sea salt
  • 4 Tbsp olive oil or coconut oil
  • extra for coating coconut or olive oil

Instructions

  1. Preheat the oven to 350°F (176°C) and coat an 8x8 baking dish with oil.
  2. Chop the peaches and add them directly to the baking dish.
  3. In a mixing bowl, combine the topping ingredients and mix until evenly distributed.
  4. Spread the topping over the fruit in an even layer.
  5. Bake for 40-45 minutes until the fruit is bubbling and the topping is golden brown.
  6. Serve warm, optionally with dairy-free ice cream.
