Ingredients

Filling

  • 10 pieces ripe peaches, peeled and sliced
  • 2 Tbsp arrowroot powder (or cornstarch)
  • 1 tsp vanilla
  • 1 Tbsp lemon juice
  • 3 Tbsp coconut sugar
  • ¼ tsp nutmeg

Crumble

  • 1 cup rolled oats
  • 1 cup almond flour
  • cup coconut sugar
  • ¼ tsp salt
  • ¼ tsp cinnamon
  • cup almond butter
  • ½ cup melted coconut oil
  • 1 tsp vanilla

Instructions

  1. 1. Preheat the oven to 350°F and prepare a baking dish with nonstick spray.
  2. 2. Peel the peaches and slice them.
  3. 3. In a bowl, mix the sliced peaches with arrowroot powder, vanilla, lemon juice, coconut sugar, and nutmeg until coated.
  4. 4. In a separate bowl, mix the oats, almond flour, coconut sugar, salt, and cinnamon for the crumble topping.
  5. 5. Add almond butter, melted coconut oil, and vanilla to the crumble mixture and mix until it sticks together.
  6. 6. Pour the peach mixture into the baking dish and sprinkle the crumble topping evenly on top.
  7. 7. Bake for 35-40 minutes until the topping is golden brown.
  8. 8. Let it rest for at least 15 minutes before serving.
