Instructions
- Preheat the oven to 350°F.
- In a large pot, combine the peaches, maple syrup, vanilla, and cinnamon over medium heat.
- Bring the mixture to a boil, then simmer until the peaches are fork-tender.
- In a food processor, combine walnuts and shredded coconut and process until crumbly.
- Add maple syrup, coconut oil, salt, and almond extract to the processor and blend until sticky and crumbly.
- Pour the peach filling into a baking dish and sprinkle the crumble topping over it.
- Bake for 15 to 20 minutes until the top is golden, then serve warm.
