Ingredients

The filling

  • 6 large peaches, sliced
  • 1 tablespoon lemon juice
  • 1 tablespoon vanilla extract
  • 3 tablespoons arrowroot powder

The topping

  • cups blanched almond flour
  • ½ teaspoon celtic sea salt
  • ¼ cup palm shortening or grapeseed oil
  • ¼ cup honey or agave nectar

Instructions

  1. 1. Combine peach slices, lemon juice, vanilla, and arrowroot in a large bowl and toss to mix.
  2. 2. In another bowl, mix almond flour, salt, palm shortening (or oil), and honey (or agave) for the topping.
  3. 3. Place the peach mixture in a 3-quart baking dish.
  4. 4. Crumble the topping over the peaches.
  5. 5. Bake covered at 350°F for 45 minutes until the peach juice is bubbling.
  6. 6. Remove the cover and bake for a few more minutes if the topping is not yet browned.
  7. 7. Serve warm.
