Ingredients

  • cups old fashioned oats
  • ¾ cup all-purpose flour
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup butter, at room temperature
  • ½ cup Biscoff Spread
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, whisk together oats, flour, baking soda, cinnamon, and salt, then set aside.
  3. In a stand mixer, beat the butter, Biscoff spread, granulated sugar, and brown sugar until smooth and creamy.
  4. Add the egg and vanilla extract to the mixture and beat until smooth.
  5. Reduce the mixer speed to low and gradually add the dry ingredients, mixing until just blended.
  6. Chill the dough in the refrigerator for 30 minutes.
  7. Form rounded tablespoons of dough and place them 2 inches apart on the baking sheet.
  8. Bake for 8 to 10 minutes until golden and firm around the edges.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
