Instructions
- Preheat the oven to 350°F and prepare a baking sheet with parchment paper or a silicone mat.
- In a medium bowl, whisk together oats, flour, baking soda, cinnamon, and salt, then set aside.
- In a stand mixer, beat the butter, Biscoff spread, granulated sugar, and brown sugar until smooth and creamy.
- Add the egg and vanilla extract to the mixture and beat until smooth.
- Reduce the mixer speed to low and gradually add the dry ingredients, mixing until just blended.
- Chill the dough in the refrigerator for 30 minutes.
- Form rounded tablespoons of dough and place them 2 inches apart on the baking sheet.
- Bake for 8 to 10 minutes until golden and firm around the edges.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
