Instructions
- Beat the softened butter until smooth and creamy.
- Add granulated sugar and brown sugar, then beat until fluffy.
- Mix in the egg, egg yolk, and vanilla extract until combined.
- Add Biscoff spread and mix until fully incorporated.
- In a separate bowl, whisk together flour, baking soda, cornstarch, cinnamon, and salt.
- Gradually mix the dry ingredients into the wet ingredients until combined.
- Fold in the chocolate chips.
- Cover the dough and chill in the refrigerator for at least 3 hours.
- Allow the dough to sit at room temperature for 20-30 minutes before baking.
- Preheat the oven to 350°F (177°C) and prepare baking sheets.
- Scoop and roll the dough into balls and place them on the baking sheets.
- Bake for 9-10 minutes, then cool on the baking sheet for 5 minutes before transferring to a rack.
