Ingredients

  • ½ cup unsalted butter, softened to room temperature
  • ½ cup granulated sugar
  • ½ cup packed light or dark brown sugar
  • 1 large egg, at room temperature
  • 1 large egg yolk, at room temperature
  • 2 teaspoons pure vanilla extract
  • ½ cup Biscoff spread
  • 2 cups all-purpose flour (spooned & leveled)
  • 1 teaspoon baking soda
  • 1 teaspoon cornstarch
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 and ¼ cups semi-sweet chocolate chips

Instructions

  1. Beat the softened butter until smooth and creamy.
  2. Add granulated sugar and brown sugar, then beat until fluffy.
  3. Mix in the egg, egg yolk, and vanilla extract until combined.
  4. Add Biscoff spread and mix until fully incorporated.
  5. In a separate bowl, whisk together flour, baking soda, cornstarch, cinnamon, and salt.
  6. Gradually mix the dry ingredients into the wet ingredients until combined.
  7. Fold in the chocolate chips.
  8. Cover the dough and chill in the refrigerator for at least 3 hours.
  9. Allow the dough to sit at room temperature for 20-30 minutes before baking.
  10. Preheat the oven to 350°F (177°C) and prepare baking sheets.
  11. Scoop and roll the dough into balls and place them on the baking sheets.
  12. Bake for 9-10 minutes, then cool on the baking sheet for 5 minutes before transferring to a rack.
