Ingredients

The cookie base

  • cups old fashioned oats
  • ½ cup all-purpose flour
  • 2 tablespoons all-purpose flour
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup butter
  • ½ cup Biscoff Spread
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ½ cup toffee bits

For serving

  • to taste ice cream

Instructions

  1. Preheat the oven to 350°F and grease ramekins with cooking spray.
  2. In a bowl, whisk together oats, flour, baking soda, cinnamon, and salt.
  3. In a stand mixer, beat butter, Biscoff spread, granulated sugar, and brown sugar until creamy. Add egg and vanilla, mixing until smooth.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Stir in toffee bits.
  5. Press about ¼ cup of dough into each ramekin and place them on a baking sheet.
  6. Bake for 10-12 minutes until golden around the edges but soft in the center. Let cool for 2 minutes.
  7. Top with ice cream if desired and serve warm.
