Instructions
- Preheat the oven to 350°F and grease ramekins with cooking spray.
- In a bowl, whisk together oats, flour, baking soda, cinnamon, and salt.
- In a stand mixer, beat butter, Biscoff spread, granulated sugar, and brown sugar until creamy. Add egg and vanilla, mixing until smooth.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Stir in toffee bits.
- Press about ¼ cup of dough into each ramekin and place them on a baking sheet.
- Bake for 10-12 minutes until golden around the edges but soft in the center. Let cool for 2 minutes.
- Top with ice cream if desired and serve warm.
