Jalapeno Pesto Chicken

Ingredients

The marinade

  • 3 limes lime
  • 1 bunch cilantro
  • 4 units jalapenos
  • 5 cloves garlic
  • 1 tablespoon olive oil
  • 1 tablespoon sea salt
  • 1 teaspoon pepper

The chicken

  • 6 pack chicken legs

Instructions

  1. Zest the limes and then juice them into a food processor.
  2. Add cilantro, jalapenos, garlic, olive oil, sea salt, and pepper to the processor.
  3. Blend all ingredients until mixed uniformly.
  4. Marinate the chicken legs for up to 4 hours.
  5. Grill the chicken on medium/high heat for about 7-8 minutes on each side or until the internal temperature reaches 170°F.
