Jalapeño Cheddar Grilled Chicken

The chicken

boneless skinless chicken breasts

shredded cheddar cheese (divided)

Instructions
- 1. Cut a slit along the edge of each chicken breast and prepare the marinade by whisking lime juice, zest, cilantro, salt, pepper, and sugar.
- 2. Marinate the chicken in a Ziploc bag for at least 1 hour.
- 3. Stuff each chicken breast with cheddar cheese, jalapeño, and cilantro.
- 4. Preheat the grill and brush it with olive oil.
- 5. Grill the chicken for about 7 minutes per side, then add more cheese on top and cook until melted.
- 6. Remove from heat and serve.
