Quick & Easy Tender Chicken Adobo

The sauce

regular soy sauce

rice vinegar or cane vinegar, coconut vinegar, palm vinegar, or white vinegar

garlic, minced

whole black peppercorns

Instructions
- Heat the vegetable oil in a medium-sized pan over medium heat and cook the sliced onions until they are translucent.
- Move the onions aside and place the chicken thighs skin side down to brown them for a few minutes.
- Add the soy sauce, minced garlic, black peppercorns, bay leaves, and vinegar to the pan without stirring.
- Bring the mixture to a boil, then cover and reduce to low-medium heat for 10 minutes.
- Flip the chicken over so it's skin side up, cover, and simmer for another 10 minutes.
- Uncover and simmer for an additional 3-5 minutes to thicken the sauce, then remove from heat and let rest before serving.
