Quick & Easy Tender Chicken Adobo

Ingredients

The chicken

  • 4 pieces skin-on bone-in chicken thighs

The sauce

  • ¼ cup regular soy sauce
  • ½ cup rice vinegar or cane vinegar, coconut vinegar, palm vinegar, or white vinegar
  • 1 ½ tablespoons garlic, minced
  • ½ teaspoon whole black peppercorns
  • 2 pieces bay leaves
  • ½ piece onion, sliced
  • 1 tablespoon vegetable oil

Instructions

  1. Heat the vegetable oil in a medium-sized pan over medium heat and cook the sliced onions until they are translucent.
  2. Move the onions aside and place the chicken thighs skin side down to brown them for a few minutes.
  3. Add the soy sauce, minced garlic, black peppercorns, bay leaves, and vinegar to the pan without stirring.
  4. Bring the mixture to a boil, then cover and reduce to low-medium heat for 10 minutes.
  5. Flip the chicken over so it's skin side up, cover, and simmer for another 10 minutes.
  6. Uncover and simmer for an additional 3-5 minutes to thicken the sauce, then remove from heat and let rest before serving.
