Chicken Adobo

Ingredients

The sauce

  • ½ cup cane vinegar or rice vinegar
  • ½ cup soy sauce
  • 1 Tbsp brown sugar or palm sugar
  • 1 tsp black peppercorns

The chicken

  • 6 pieces bone-in, skin-on chicken thighs

Other ingredients

  • 1 Tbsp vegetable oil
  • 5 cloves garlic
  • 3 pieces bay leaves

Instructions

  1. Whisk together vinegar, soy sauce, brown sugar, and peppercorns in a measuring cup and set aside.
  2. Heat oil in a large pot over medium-high heat and brown three chicken thighs skin side down for 4-6 minutes.
  3. Transfer browned chicken to a plate and repeat with the remaining thighs, adding garlic to the pan during the last 30 seconds.
  4. Pour the vinegar mixture into the pan and return three chicken pieces to the pot, adding bay leaves.
  5. Bring the sauce to a boil, then reduce heat, cover, and simmer for 20 minutes.
  6. Flip the chicken and continue to simmer uncovered for another 20 minutes until cooked through.
  7. Remove bay leaves and serve the chicken warm over rice with sauce.
