Ingredients

The meat

  • 3 pieces chicken legs
  • 3 pieces chicken thighs
  • 350-400 g pork belly

The sauce

  • ½ cup white cane vinegar
  • ¼ cup soy sauce
  • ¾ - 1 cup water
  • teaspoons whole black peppercorns
  • 2 pieces bay leaves
  • 8-10 cloves garlic
  • to taste none freshly cracked black pepper

Instructions

  1. Marinate the meat in all ingredients except water for about 30 minutes.
  2. In a pot, add the marinated ingredients and ½ cup of water, then bring to a boil.
  3. Reduce heat and simmer without stirring until the vinegar's acidity is mostly cooked off.
  4. Continue simmering until the chicken is very tender, about 40 minutes to an hour.
  5. Remove the chicken and mash some garlic cloves into the sauce.
  6. Simmer the sauce until the pork is tender, about another 30 minutes to 1 hour.
  7. Remove the pork and reduce the sauce to desired consistency, adding brown sugar if desired.
  8. In a skillet, fry the chicken and pork until browned.
  9. Return the browned meat to the sauce, toss gently, and serve.
