Pork Adobo

Ingredients

  • 2 tablespoons neutral oil
  • 2 pounds pork shoulder, cut into 1" chunks
  • 2 cloves garlic, minced
  • cup soy sauce
  • cup white vinegar
  • 2 pieces bay leaves
  • ½ tablespoon black peppercorns
  • 1 tablespoon brown sugar or Brown Swerve

Instructions

  1. Heat the oil in a Dutch oven over medium-high heat.
  2. Brown the pork shoulder on all sides.
  3. Add the remaining ingredients and stir to combine, coating the pork thoroughly.
  4. Reduce the heat to a simmer, cover, and cook for 40 minutes.
  5. Uncover and cook for an additional 10 to 15 minutes until the sauce has reduced.
  6. Discard the bay leaves and serve warm with desired sides.
