Crockpot Pork Adobo with Black Beans

Instructions
- Soak the black beans overnight after rinsing them.
- Marinate the pork with soy sauce, brown sugar, garlic, bay leaves, and peppercorns overnight in the refrigerator.
- The next morning, drain the beans and discard the marinade, reserving the bay leaves, garlic, and peppercorns.
- Cut the pork into 2-inch pieces and place the black beans in the crockpot, followed by the pork, garlic, bay leaves, and peppercorns.
- Add soy sauce, water, and brown sugar to the crockpot and stir gently.
- Cook on low for 8 hours or high for 5-6 hours.
- In the last hour, check for tenderness, then add vinegar and cook for an additional 20-30 minutes before serving.
