Ingredients

  • 2 cups dry black beans
  • 2 lbs. pork shoulder
  • 3 ¼ cups Filipino soy sauce
  • ¼ cup brown sugar
  • 10 cloves garlic
  • 3 leaves bay leaves
  • 1 tablespoon whole black peppercorns
  • 1 cup vinegar
  • 3 cups water

Instructions

  1. Soak the black beans overnight after rinsing them.
  2. Marinate the pork with soy sauce, brown sugar, garlic, bay leaves, and peppercorns overnight in the refrigerator.
  3. The next morning, drain the beans and discard the marinade, reserving the bay leaves, garlic, and peppercorns.
  4. Cut the pork into 2-inch pieces and place the black beans in the crockpot, followed by the pork, garlic, bay leaves, and peppercorns.
  5. Add soy sauce, water, and brown sugar to the crockpot and stir gently.
  6. Cook on low for 8 hours or high for 5-6 hours.
  7. In the last hour, check for tenderness, then add vinegar and cook for an additional 20-30 minutes before serving.
