Chicken Adobo

Ingredients

The chicken

  • 2 ½ pounds bone-in, skin-on chicken pieces

The sauce

  • 2 tablespoons vegetable oil
  • 2 tablespoons garlic, minced
  • 2 tablespoons sliced jalapeno
  • cup white vinegar
  • cup soy sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon black pepper, freshly ground
  • 3 pieces bay leaves

Instructions

  1. Heat the oil in a large pan over medium-high heat and sear the chicken pieces until browned.
  2. Remove the chicken and sauté garlic and 1 tablespoon of jalapeno in the same pan.
  3. Add vinegar, soy sauce, brown sugar, black pepper, and bay leaves to the pan.
  4. Return the chicken to the pan and bring the mixture to a simmer.
  5. Cover and simmer for 35-40 minutes until the chicken is tender.
  6. Uncover and increase heat to medium-high to thicken the sauce for an additional 3-5 minutes.
  7. Garnish with remaining jalapenos and serve.
