Chicken Adobo

Instructions
- Heat the oil in a large pan over medium-high heat and sear the chicken pieces until browned.
- Remove the chicken and sauté garlic and 1 tablespoon of jalapeno in the same pan.
- Add vinegar, soy sauce, brown sugar, black pepper, and bay leaves to the pan.
- Return the chicken to the pan and bring the mixture to a simmer.
- Cover and simmer for 35-40 minutes until the chicken is tender.
- Uncover and increase heat to medium-high to thicken the sauce for an additional 3-5 minutes.
- Garnish with remaining jalapenos and serve.
