Filipino Chicken Adobo

The chicken

The marinade

white vinegar

Fresno chili pepper or jalapeño, sliced thin

Instructions
- Mix together vinegar, soy sauce, garlic, bay leaves, peppercorns, and maple syrup in a bowl. Add chicken and marinate for 1-3 hours.
- Heat oil in a pan, drain the chicken and brown it for about 3 minutes per side.
- Add reserved marinade back into the pan, along with the chili pepper. Simmer uncovered until the sauce reduces and the chicken is glazed, about 15-20 minutes.
- Serve topped with green onions.
