Filipino Chicken Adobo

Ingredients

The chicken

  • pounds chicken thighs, skinless and boneless

The marinade

  • ¼ cup white vinegar
  • ¼ cup soy sauce
  • 6 cloves garlic, crushed or finely minced
  • 3 pieces bay leaves
  • 1 teaspoon black peppercorns
  • 1 tablespoon maple syrup
  • 1 piece Fresno chili pepper or jalapeño, sliced thin

For garnish

  • 2 pieces green onions, sliced

Instructions

  1. Mix together vinegar, soy sauce, garlic, bay leaves, peppercorns, and maple syrup in a bowl. Add chicken and marinate for 1-3 hours.
  2. Heat oil in a pan, drain the chicken and brown it for about 3 minutes per side.
  3. Add reserved marinade back into the pan, along with the chili pepper. Simmer uncovered until the sauce reduces and the chicken is glazed, about 15-20 minutes.
  4. Serve topped with green onions.
