Ingredients

The salad

  • 2 cups cooked chicken, diced or shredded
  • ¾ cup curly kale, chopped
  • ½ cup grape tomatoes, halved or quartered
  • 2 tablespoons red onion, fine diced
  • 2 pieces green onion, thinly sliced
  • cup sweet corn kernels
  • 2 tablespoons smoked almonds or dry roasted almonds

The dressing

  • cup mayo
  • 2 tablespoons BBQ sauce
  • to taste salt and pepper

Optional toppings

  • to taste green parts of green onion
  • to taste extra almonds
  • to taste small cheese cubes or shredded cheese
  • to taste quartered or halved grape tomatoes
  • to taste lime wedges

Instructions

  1. In a medium bowl, combine all of the ingredients and stir to mix well.
  2. Serve the chicken salad over a bed of greens, in a lettuce leaf, wrapped in a tortilla, or on top of gluten-free crackers.
  3. Store leftovers in an airtight container in the fridge for up to 4 days.
