Ingredients

The salad

  • 2 small heads Little Gem lettuce
  • 1 cup vegetable sprouts
  • ½ cup fresh chopped dill
  • 1 cup shelled sweet peas
  • 1 cup fresh sprouted red lentils

The dressing

  • ½ lemon juice and zest
  • 1 ½ tablespoons extra virgin olive oil
  • as desired salt
  • as desired black pepper

Instructions

  1. Place the lettuce leaves, vegetable sprouts, dill, peas, and red lentils in a salad bowl.
  2. Toss the ingredients together.
  3. In a small dish, mix lemon juice and zest with salt and black pepper, then whisk until combined.
  4. Drizzle the dressing over the salad and toss to combine.
  5. Serve immediately.
