Fresh Pea Salad

The salad

The dressing

fresh mint leaves

Instructions
- Puree mint, dates, serrano chile, lemon juice, and lemon zest until smooth.
- Thin the dressing with water until it reaches a drizzle consistency.
- Boil salted water and blanch the peas for 10-20 seconds, then transfer to ice water.
- In a bowl, combine the peas, shredded romaine, and pumpkin seeds.
- Add half of the dressing and a pinch of salt, then toss gently.
- Taste and adjust seasoning and dressing as needed before serving.
