Ingredients

The salad

  • cups fresh peas
  • 1 small head romaine lettuce
  • ½ cup toasted pumpkin seeds
  • fine grain to taste sea salt

The dressing

  • 1 cup fresh mint leaves
  • 2 dried dates pitted
  • ½ small serrano chile
  • 1 squeeze fresh lemon juice
  • zest from 1 lemon lemon zest
  • water as needed to thin dressing

Instructions

  1. Puree mint, dates, serrano chile, lemon juice, and lemon zest until smooth.
  2. Thin the dressing with water until it reaches a drizzle consistency.
  3. Boil salted water and blanch the peas for 10-20 seconds, then transfer to ice water.
  4. In a bowl, combine the peas, shredded romaine, and pumpkin seeds.
  5. Add half of the dressing and a pinch of salt, then toss gently.
  6. Taste and adjust seasoning and dressing as needed before serving.
