Ingredients

  • 2 cups petite frozen peas, thawed
  • ½ cup Greek yogurt
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • pinch cayenne pepper (optional)
  • ¼ cup red onions, diced
  • ½ cup celery, diced
  • ½ cup smoked cheddar cheese, cubed
  • ½ cup fresh tarragon and parsley mixed
  • ¼ cup fresh mint

Instructions

  1. In a large bowl, mix together Greek yogurt, apple cider vinegar, olive oil, salt, pepper, and cayenne pepper.
  2. Add diced onions, celery, cheese, tarragon, parsley, mint, and peas to the bowl.
  3. Mix thoroughly and adjust seasoning if needed.
  4. Chill until ready to serve, as the salad is best served cold.
