Ingredients

  • 1 lb frozen peas
  • 1 fresh lemon lemon
  • 1 small shallot, minced (about 2 Tbsp)
  • 2 Tbsp olive oil
  • ΒΌ tsp salt
  • to taste freshly cracked pepper
  • 3-4 sprigs fresh mint

Instructions

  1. Thaw the peas in a colander and rinse briefly with cool water.
  2. Prepare the vinaigrette by zesting the lemon and squeezing about 2 tablespoons of juice into a bowl.
  3. Mince the shallot and add it to the lemon juice along with olive oil, salt, and pepper. Whisk to combine.
  4. Rinse the mint, remove leaves from stems, and slice into thin strips.
  5. Combine the thawed peas, vinaigrette, mint, and a pinch of lemon zest in a large bowl. Stir to combine.
  6. Taste and adjust seasoning or add more zest if desired. Serve immediately or refrigerate to blend flavors.
