Minty Pea Salad

Instructions
- Thaw the peas in a colander and rinse briefly with cool water.
- Prepare the vinaigrette by zesting the lemon and squeezing about 2 tablespoons of juice into a bowl.
- Mince the shallot and add it to the lemon juice along with olive oil, salt, and pepper. Whisk to combine.
- Rinse the mint, remove leaves from stems, and slice into thin strips.
- Combine the thawed peas, vinaigrette, mint, and a pinch of lemon zest in a large bowl. Stir to combine.
- Taste and adjust seasoning or add more zest if desired. Serve immediately or refrigerate to blend flavors.
