Ingredients

The steak

  • 1 pound steak (T-bone, skirt, flank, or porterhouse)
  • 1 teaspoon kosher salt
  • ¾ teaspoon black pepper
  • 1 tablespoon olive oil
  • ¼ cup butter
  • 3 cloves garlic (crushed)
  • 2 sprigs fresh rosemary

To assemble the bowls

  • 4 cups cooked rice
  • ½ cup kidney beans
  • ½ cup corn kernels (canned or fresh)
  • 1 small tomato (diced)
  • 1 cup mixed greens
  • ½ cup garlic yogurt sauce

Instructions

  1. Season the steak with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium-high heat, then add garlic and rosemary.
  3. Sear the steak for 4 minutes, flip it, add butter, and cook for another 4 minutes while basting with melted butter.
  4. Let the steak rest for 10 minutes before slicing it into cubes.
  5. Assemble the bowls by adding rice, kidney beans, corn, tomato, mixed greens, and steak, then drizzle with garlic yogurt sauce.
