Apple-Frangipane Galette

Ingredients

The pastry

  • cups all-purpose flour
  • 2 tablespoons sugar
  • ½ teaspoon table salt
  • 2 sticks unsalted butter
  • ½ cup ice water
  • 2 tablespoons ice water

The frangipane

  • ½ cup almond flour
  • 2 tablespoons sugar
  • pinch salt
  • 2 tablespoons butter at room temperature
  • 1 egg
  • 2 teaspoons Bourbon, rum, brandy or vanilla

For assembly

  • 1 to 2 apples peeled and thinly sliced
  • 2 tablespoons melted butter
  • 1 to 2 tablespoons sugar
  • 1 scoop vanilla ice cream (for serving)

Instructions

  1. Preheat the oven to 400ºF and prepare a baking sheet.
  2. In a food processor, combine flour, sugar, and salt. Add butter and pulse until crumbly.
  3. Add ice water and pulse until the dough holds together. Split the dough in half and shape into disks.
  4. In the same food processor, combine almond flour, sugar, salt, butter, and egg. Pulse until smooth, then add vanilla or alcohol.
  5. Roll out one disk of dough into a 12- or 13-inch round and place it on a lined baking sheet.
  6. Spread the frangipane in the center, leaving a 1-inch border, and arrange apple slices on top.
  7. Fold the edges of the dough over the apples, brush with melted butter, and sprinkle with sugar.
  8. Bake for 35 minutes or until golden. Let cool before serving, optionally with vanilla ice cream.
