Ingredients

The crust

  • 1 ½ cups unbleached all-purpose flour
  • 1 Tbsp granulated sugar
  • ¼ tsp salt
  • 10 Tbsp unsalted butter (cut into ½-inch cubes)
  • 4 to 5 Tbsp ice water

The filling

  • 1 ½ lbs baking apples (about 3 large)
  • ¼ cup granulated sugar
  • ½ tsp ground cinnamon
  • 2 Tbsp unsalted butter (diced into ¼-inch cubes)

The finish

  • 1 large egg
  • ½ Tbsp water
  • 1 Tbsp turbinado sugar or sparkling sugar
  • 1 Tbsp honey (warmed) or apricot preserves

Instructions

  1. Whisk together flour, sugar, and salt in a large mixing bowl.
  2. Cut in butter cubes until small clumps form.
  3. Add ice water gradually until the mixture comes together.
  4. Shape the dough into a disk, wrap it, and chill for 30 to 60 minutes.
  5. Preheat the oven to 375°F and prepare a baking sheet with parchment paper.
  6. Roll out the dough into a 13.5-inch round and transfer it to the baking sheet.
  7. Peel, core, and thinly slice the apples, then toss them with sugar and cinnamon.
  8. Arrange the apples in a circular pattern on the crust, leaving a 2-inch edge.
  9. Fold the crust edges over the apples and brush with egg wash.
  10. Sprinkle the edges with turbinado sugar and dot with remaining butter.
  11. Bake for 40 to 50 minutes until apples are tender.
  12. Let cool for 10 minutes before brushing with honey or preserves and slicing.
