Rustic Apple Galette

Ingredients

The crust

  • cups all-purpose flour
  • ¼ tsp salt
  • ½ cup cold butter or shortening
  • ½ cup ice-cold water

The filling

  • large granny smith apples
  • ½ cup brown sugar
  • tsp cinnamon
  • 1 tsp ginger powder
  • tbsp corn starch
  • 1 tbsp vanilla
  • ¾ tsp salt
  • juice from half a lemon

The egg wash

  • 1 egg
  • 2 tbsp whole milk or plant-based milk
  • extra granulated sugar

Instructions

  1. Mix flour and cold butter in a bowl until it resembles coarse sand.
  2. Dissolve salt in ice-cold water and mix into the flour mixture to form a dough.
  3. Wrap the dough in plastic and refrigerate for 30-45 minutes.
  4. Core and slice apples, then mix with brown sugar, cinnamon, ginger, cornstarch, vanilla, salt, and lemon juice.
  5. Preheat oven to 400F and place a baking sheet inside to heat.
  6. Roll out the dough to about 13-15 inches in diameter and place on parchment paper.
  7. Arrange the sliced apples in circles on the dough, pouring excess juices over them.
  8. Fold the edges of the dough over the filling.
  9. Prepare the egg wash and brush it over the crust, then sprinkle with sugar.
  10. Bake for 43-45 minutes until golden, then cool slightly before serving.
