Ingredients

Crust

  • cups white whole wheat flour
  • ¼ tsp salt
  • 3 tbsp coconut sugar
  • 6 tbsp cold butter
  • ½ cup ice water

Filling

  • 4 medium apples
  • ¼ cup coconut sugar
  • 1 tbsp lemon juice
  • 1 tsp cinnamon

Topping

  • 2 tbsp butter
  • 1 egg egg
  • to taste turbinado sugar

Drizzle

  • 1 cup powdered sugar
  • 1 tsp cinnamon
  • 2 tbsp milk

Instructions

  1. Preheat the oven to 375°F.
  2. Mix flour, salt, and coconut sugar in a large bowl.
  3. Grate the cold butter into the flour mixture and mix using a pastry cutter.
  4. Gradually add ice water until the dough comes together, then form it into a ball and refrigerate for 1 hour.
  5. Peel, core, and thinly slice the apples, then mix them with coconut sugar, lemon juice, and cinnamon.
  6. Roll out the chilled dough on floured parchment paper into a circle about the size of a large pie dish.
  7. Place the apples in the center of the dough, leaving a 2-inch border.
  8. Fold the edges of the dough over the apples, overlapping as necessary.
  9. Dot the apples with butter, brush the crust with egg, and sprinkle with turbinado sugar.
  10. Bake for 45-50 minutes until golden brown, then let cool for 30 minutes.
  11. Whisk together drizzle ingredients and pour over the cooled galette.
