Ingredients

The crust

  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • 3 tablespoons granulated sugar
  • 6 ounces cold unsalted butter
  • 4-5 tablespoons ice water

The filling

  • 4 medium apples
  • 5-6 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 2 teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • 2 tablespoons all-purpose flour
  • 2 tablespoons ground almond
  • 3 tablespoons unsalted butter

The topping

  • 1 egg beaten (for egg wash)
  • to taste coarse sugar for sprinkling

Instructions

  1. Prepare the crust by mixing flour, salt, and sugar, then cutting in the butter until crumbly.
  2. Add ice water until the dough is moistened, then knead lightly and refrigerate.
  3. For the filling, mix sliced apples with brown sugar, vanilla, lemon juice, cinnamon, nutmeg, and flour.
  4. Roll out the dough into a circle and place it on a baking sheet.
  5. Spread almond butter mixture (if using) over the crust.
  6. Arrange the apple filling in a circle, leaving a border, and fold the edges over the filling.
  7. Brush the edges with beaten egg and sprinkle with coarse sugar.
  8. Bake at 400°F for 30-40 minutes until the apples are tender and the crust is golden.
  9. Let cool for 10-15 minutes before serving.
