Enoki Beef Rolls

Ingredients

  • 400 grams enoki mushrooms
  • pounds thinly sliced beef, pork, or lamb
  • ½ teaspoon Umami Stir Fry Powder or Diamond Crystal kosher salt
  • 2 tablespoons avocado oil
  • ½ cup All-Purpose Stir-Fry Sauce
  • 1 teaspoon arrowroot powder
  • 2 scallions thinly sliced

Instructions

  1. Cut the root ends off the enoki mushrooms and separate them into small bundles.
  2. Lay a piece of beef on a cutting board and place a bundle of mushrooms in the middle, then wrap the beef around the mushrooms.
  3. Sprinkle the rolls with Umami Stir-Fry Powder or salt.
  4. Heat a skillet and add avocado oil, then fry half of the rolls seam-side down until browned.
  5. Flip the rolls and cook until browned all over, then transfer to a dish and repeat with the remaining rolls.
  6. Whisk together All-Purpose Stir-Fry Sauce and arrowroot powder to make the sauce.
  7. Pour the sauce into the skillet and cook until it thickens slightly.
  8. Add the beef rolls to the sauce and coat them well, then transfer to a serving platter and garnish with scallions.
