Grilled Pineapple Pork Sandwiches

Ingredients

The pork

  • 2 ½ lbs. pork shoulder or pork butt
  • 2 cloves minced garlic
  • 1 medium red onion, diced
  • 2 medium red bell peppers, diced
  • 1–2 medium jalapenos, diced
  • 1 cup pineapple juice
  • ½ cup soy sauce

The sandwich

  • 8 pieces King’s Hawaiian sandwich buns
  • 1 whole pineapple, peeled and cored
  • ¼ cup fresh cilantro or parsley for topping

Instructions

  1. Place the pork, garlic, onion, peppers, jalapeno, pineapple juice, and soy sauce in a slow cooker and cook on high for 4-5 hours or low for 7-8 hours.
  2. Shred the pork in the slow cooker using two forks.
  3. Preheat the oven to 450 degrees and cover a baking sheet with foil.
  4. Transfer the shredded meat to the baking sheet and bake for 15 minutes until golden brown.
  5. In a skillet, grill the pineapple slices until golden brown on both sides.
  6. Assemble the sandwiches with the meat and grilled pineapple, and top with cilantro or parsley.
