Instructions
- Prepare a grill for indirect heat.
- Cut the pork loin in half to fit on the grill, then split it lengthwise for stuffing.
- Rub the inside of the loin with olive oil, then add garlic salt, prosciutto, smoked provolone, spinach, and Italian seasoning.
- Reassemble the loin and tie it with butcher's twine. Rub the outside with olive oil and apply BBQ rub.
- Cook for about 2 hours on indirect heat at 275 to 300 degrees until the internal temperature reaches 145 degrees.
