Prosciutto, Spinach and Provolone Stuffed Pork Loin

Ingredients

  • 1 whole pork loin
  • 1 tbsp garlic salt
  • 8-12 slices prosciutto ham
  • to taste smoked provolone
  • 1 bag fresh spinach
  • to taste Italian seasoning
  • to taste BBQ rub
  • to taste olive oil

Instructions

  1. Prepare a grill for indirect heat.
  2. Cut the pork loin in half to fit on the grill, then split it lengthwise for stuffing.
  3. Rub the inside of the loin with olive oil, then add garlic salt, prosciutto, smoked provolone, spinach, and Italian seasoning.
  4. Reassemble the loin and tie it with butcher's twine. Rub the outside with olive oil and apply BBQ rub.
  5. Cook for about 2 hours on indirect heat at 275 to 300 degrees until the internal temperature reaches 145 degrees.
