Chorizo and Eggs with Avocado

Ingredients

  • 1 each finely chopped green pepper
  • 1 pound chorizo sausage
  • 7 each eggs
  • 1 to 2 each ripe avocados

Instructions

  1. Preheat your oven to 375 degrees.
  2. Sauté the green pepper in a skillet over low to medium heat for about five minutes.
  3. Crumble the chorizo into the skillet and sauté until cooked through, about five minutes.
  4. Crack the eggs over the chorizo and green pepper mixture.
  5. Bake in the oven for about ten minutes, or until the eggs are cooked to your liking.
  6. Top with sliced avocado before serving.
