Cheesy Potluck Potatoes

Ingredients

The potatoes

  • 2 lb frozen cubed hash brown potatoes, defrosted
  • ¼ cup chopped onion
  • 1 cup fat free sour cream
  • 10.75 oz can of 98% fat free cream of chicken or cream of mushroom soup
  • 1 cup 2% reduced fat shredded cheddar cheese
  • ¾ cup corn flakes, crushed

Seasoning

  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 350°F and prepare a 9 x 13 baking dish with cooking spray.
  2. In a large bowl, mix all ingredients except the corn flakes until well combined.
  3. Transfer the mixture to the baking dish and spread evenly.
  4. Sprinkle the crushed corn flakes on top.
  5. Bake for one hour until the potatoes are cooked through.
  6. Slice into eight pieces and serve.
