Instructions
- Preheat the oven to 350°F and coat a 9x13 baking dish with cooking spray.
- In a large bowl, combine the cubed potatoes, melted butter, cream of chicken soup, sour cream, diced onion, salt, pepper, garlic powder, onion powder, and 1 cup of cheddar cheese. Stir to combine.
- Transfer the potato mixture into the prepared baking dish and spread evenly.
- Sprinkle the remaining 1 ½ cups of cheddar cheese over the top.
- Bake for 40-45 minutes or until the top is golden brown. Optionally, sprinkle with parsley before serving.
