Ingredients

The potatoes

  • 2 lb frozen cubed hash browns, thawed or cubed boiled potatoes

The sauce

  • 6 tablespoons butter, melted
  • 10 ½ ounce can cream of chicken soup
  • 2 cups sour cream
  • cup onion, finely diced
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

The cheese

  • 2 ½ cups shredded cheddar cheese, divided

Garnish

  • 1 tablespoon chopped parsley (optional)

Miscellaneous

  • 1 can cooking spray

Instructions

  1. Preheat the oven to 350°F and coat a 9x13 baking dish with cooking spray.
  2. In a large bowl, combine the cubed potatoes, melted butter, cream of chicken soup, sour cream, diced onion, salt, pepper, garlic powder, onion powder, and 1 cup of cheddar cheese. Stir to combine.
  3. Transfer the potato mixture into the prepared baking dish and spread evenly.
  4. Sprinkle the remaining 1 ½ cups of cheddar cheese over the top.
  5. Bake for 40-45 minutes or until the top is golden brown. Optionally, sprinkle with parsley before serving.
