One Pot Cheesy Potatoes

Instructions
- Preheat the oven to 375°F.
- Heat the butter in an oven-safe pot over medium heat and sauté the onion for 4-5 minutes until soft.
- Add garlic and sauté for another 30-60 seconds until fragrant.
- Whisk in the flour until incorporated and cook for 1-2 minutes until bubbling.
- Gradually whisk in the milk and chicken stock, bringing it to a simmer and thickening for about 4-5 minutes.
- Stir in sour cream or Greek yogurt, salt, black pepper, ground mustard, nutmeg, and cayenne.
- Remove from heat and whisk in the cheese, adjusting seasoning to taste.
- Fold in the diced hash brown potatoes until well combined.
- Sprinkle the crushed cornflakes evenly on top.
- Bake for 40-45 minutes until the potatoes are tender and cheese is bubbly.
- Let cool slightly before serving.
