Ingredients

The base

  • 4 tablespoons butter
  • ½ medium onion, peeled and minced
  • 3-4 cloves garlic, peeled and minced
  • 4 tablespoons all-purpose flour
  • 2 ½ cups milk
  • 1 cup unsalted chicken stock
  • ½ cup sour cream or plain Greek yogurt
  • 2-2 ¼ teaspoons coarse salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon ground mustard
  • ¼ teaspoon ground nutmeg
  • a pinch cayenne pepper

The main components

  • 2 cups shredded mild and/or sharp cheddar cheese
  • 32 ounces diced hash brown potatoes
  • 2 cups cornflakes, lightly crushed

Instructions

  1. Preheat the oven to 375°F.
  2. Heat the butter in an oven-safe pot over medium heat and sauté the onion for 4-5 minutes until soft.
  3. Add garlic and sauté for another 30-60 seconds until fragrant.
  4. Whisk in the flour until incorporated and cook for 1-2 minutes until bubbling.
  5. Gradually whisk in the milk and chicken stock, bringing it to a simmer and thickening for about 4-5 minutes.
  6. Stir in sour cream or Greek yogurt, salt, black pepper, ground mustard, nutmeg, and cayenne.
  7. Remove from heat and whisk in the cheese, adjusting seasoning to taste.
  8. Fold in the diced hash brown potatoes until well combined.
  9. Sprinkle the crushed cornflakes evenly on top.
  10. Bake for 40-45 minutes until the potatoes are tender and cheese is bubbly.
  11. Let cool slightly before serving.
