Easy Cheesy Potatoes
Ingredients
The potatoes

medium white or red potatoes
The cheese and vegetables

shredded mild cheddar cheese

diced green or red bell pepper

diced yellow onion
Seasoning

kosher salt

teaspoon
coarsely ground black pepper
Instructions
- Preheat the oven to 350°F.
- Boil the unpeeled potatoes in a large pot of water for 10-15 minutes until firm, then drain and cool.
- Cut the potatoes into 1-inch chunks and place them in a large bowl.
- Add the cheese, bell peppers, and onions to the bowl and season with salt and pepper.
- Spray a baking dish with nonstick cooking spray and transfer the mixture into it.
- Cover the dish tightly with foil and bake for 15 minutes.
- Remove the foil and bake for an additional 5 minutes.
- Serve hot.
