Garlic Herb Cheesy Potatoes

Ingredients

The Potatoes

  • 2–3 pieces sweet potatoes
  • 2–3 pieces Russet potatoes

The Sauce

  • 1 tablespoon butter
  • 3 cloves garlic
  • ¼ cup minced fresh herbs
  • 1 cup heavy whipping cream
  • teaspoons salt
  • ½ cup reduced sodium chicken broth

The Cheese and Topping

  • 2 cups shredded Gruyère cheese
  • 3 cups Kettle Brand chips

Instructions

  1. Preheat the oven to 400°F.
  2. Melt the butter in a skillet and sauté the garlic and herbs until fragrant.
  3. Thinly slice the sweet and Russet potatoes.
  4. Toss the sliced potatoes with cream, salt, and the garlic-herb mixture.
  5. Layer half of the potatoes in a baking dish, add 1 cup of cheese and ¼ cup of broth.
  6. Add the remaining potatoes, cover with the remaining broth and cheese, then top with crushed chips.
  7. Cover with foil and bake for 35 minutes, then remove the foil and bake for another 15-20 minutes at 425°F.
