Ingredients

The dough

  • 3 cups blanched almond flour
  • teaspoons baking soda
  • ¼ teaspoon fine sea salt
  • 4 tablespoons chilled butter, ghee, or coconut oil
  • 2 large pastured eggs
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract

The mix-ins

  • 3 ounces 80% cacao dark chocolate, cut into bite-size chunks
  • cup dried cherries

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine the almond flour, baking soda, and fine sea salt.
  3. Work the cold butter into the dry ingredients until crumbly.
  4. In a separate bowl, whisk together the eggs, apple cider vinegar, honey, and vanilla extract.
  5. Make a well in the dry ingredients and pour in the egg mixture.
  6. Gently mix until a wet, chunky dough forms, then add the chocolate chunks and cherries.
  7. Combine the ingredients with your hands and form two small balls of dough.
  8. Flatten the balls into rounds about ¾-inch thick.
  9. Cut each round into 4 wedges and arrange on the baking sheet.
  10. Bake for 20 to 25 minutes until golden brown and a toothpick comes out clean.
  11. Cool on a wire rack before serving.
