Paleo Cherry Lemon Scones

Ingredients

  • 3 cups almond flour
  • 1 tsp baking powder
  • tsp sea salt
  • 1 lemon zest of lemon
  • 2 large eggs
  • 2 tbsp honey
  • 1 tsp vanilla
  • 2 tbsp juice of lemon
  • ¾ cup cherries, chopped in half

Instructions

  1. Mix the almond flour, baking powder, sea salt, and lemon zest in a large bowl.
  2. Create a well in the center and add the eggs, honey, vanilla, and lemon juice, mixing until combined.
  3. Fold in the chopped cherries gently.
  4. Preheat the oven to 325°F and line a baking sheet with parchment paper.
  5. Drop spoonfuls of dough onto the baking sheet and flatten the tops.
  6. Bake for 20 minutes or until the edges are browned.
  7. Let the scones cool, then refrigerate and reheat before serving.
