Ingredients

The scone mixture

  • cups whole wheat flour
  • ½ cup brown sugar
  • 1 teaspoon baking powder

  • 8 tablespoons unsalted butter, cut into pieces
  • cup unsweetened vanilla almond milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 large egg

The mix-ins

  • 1 cup pitted cherries, halved or diced
  • cup dark chocolate chips
  • 2 tablespoons sliced almonds

Instructions

  1. Preheat the oven to 425°F and prepare a baking sheet with parchment paper.
  2. In a food processor, combine the whole wheat flour, brown sugar, baking powder, baking soda, and salt, and blend to mix.
  3. Add the butter pieces to the food processor and pulse until combined and resembling small peas.
  4. In a separate bowl, whisk together the almond milk, vanilla extract, almond extract, and egg, then add this mixture to the food processor and pulse until a dough forms.
  5. Transfer the dough to a floured surface and gently fold in the cherries and chocolate chips.
  6. Shape the dough into a large disc and cut it into 8 triangular pieces.
  7. Place the scones on the prepared baking sheet, spaced about 1 inch apart, and sprinkle with sliced almonds.
  8. Bake for 13-15 minutes, then let cool for 5 minutes before serving.
