Crispy Chicken Schnitzel

Ingredients

The coating

  • cup Argo® Corn Starch
  • cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp cracked black pepper

The chicken

  • 2 large eggs
  • 2 large chicken breasts (about ¼ lb. each)

The cooking

  • 3 tbsp vegetable oil
  • 1 slice fresh lemon

Instructions

  1. Combine corn starch, flour, and half of the garlic powder, salt, and pepper in a bowl and whisk together.
  2. In another bowl, whisk the remaining garlic powder, salt, pepper, and eggs.
  3. Butterfly the chicken breasts and pound them to ¼ inch thickness.
  4. Dredge each chicken piece in the egg mixture, then coat with the corn starch mixture, pressing to adhere.
  5. Heat vegetable oil in a skillet over medium-high heat and cook the chicken for 2-3 minutes on each side until golden brown.
  6. Remove the chicken and drain on paper towels, sprinkling with salt.
  7. Serve hot with a squeeze of fresh lemon.
