Instructions
- Combine corn starch, flour, and half of the garlic powder, salt, and pepper in a bowl and whisk together.
- In another bowl, whisk the remaining garlic powder, salt, pepper, and eggs.
- Butterfly the chicken breasts and pound them to ¼ inch thickness.
- Dredge each chicken piece in the egg mixture, then coat with the corn starch mixture, pressing to adhere.
- Heat vegetable oil in a skillet over medium-high heat and cook the chicken for 2-3 minutes on each side until golden brown.
- Remove the chicken and drain on paper towels, sprinkling with salt.
- Serve hot with a squeeze of fresh lemon.
